Flutter By, Butterfly - Questgiver: Luigi.

Luigi's prized butterflies have escaped throughout the Pillar Mountains, and he's far too old to go chasing after them himself. The player is given a Bug Catcher's Net (2-handed weapon) and told to gather them up in under a certain amount of time or risk them flying away.

There's just one catch - the butterflies are covered in pollen from exotic flowers in the park that enrage monsters. Every monster from the base of the mountain to the top is an Elite, and they're everywhere. Catch all the butterflies by swinging (attacking with) your net within the time limit, while avoiding the sticky slime trails and overly aggressive monsters! (*No monsters during this quest give any drops whatsoever.)

Reward: Butterfly Mask? Optionally, the ability to keep the Bug Catcher's Net, used to swipe up bugs that rarely appear when traveling through areas. Good for pet food, or making potions with?

Lumberjack of All Trades - Questgiver: ?

The local lumberjack has broken an arm while trying to clear some trees, and as such can't wield his mighty two-handed Lumberjack Axe to get at a troublesome beehive in the forest that has been attacking him. You're given the axe and tasked with chopping a path through the trees to get to the hive, all the while it churns out elite bees that swarm towards you. Take the pain as you swing a path, stun the bees with your shield or butcher them (for no drops) until you get to the hive and break it.

Reward: Lumberjack Beard? Optionally, the ability to keep the Lumberjack's Axe. With this axe, you could put various slightly off-color or 'weakened' trees around the forests of the game, visible to those with a keen eye, that can only be damaged with the axe equipped and don't respawn once cut down. These would drop wood (for adding expansions to your home) or open up secret paths leading to chests or other hidden zones. Or you could just donate the wood to another NPC to help them build up their shop somewhere, opening up new goods for purchase. In any case, I love Metroidvania-esque backtracking-for-secret-paths items. =)

You could also do a similar one for a two-handed pickaxe that can only damage subtly cracked walls or stalagmites, opening up hidden areas there or dropping stones / gems for crafting.
