CO-OP, Steam with Raw?

I was wondering whether or not it is possible to play co-op with friends if one owns the steam edition and the other owns the raw edition?

Do you mean the demo verison when you say raw version?
If you both are playing the demo you can play together but you can't play together with different versions.

With raw I mean the payed non-steam version.

I'm not sure. They should work if they're the same version. You can see the version in the main menu in the top corner (or by pressing TAB I believe). Otherwise you can just both play the non-steam version.
